  • 6 oz. grated Parmesan cheese
  • 1 oz. Italian seasoning
  • 15 lb. boneless skinless chicken breast halves
  • 12 oz. butter, melted
  • 12 oz. oil


  1. Preheat  oven to 400 degrees F.
  2. COMBINE  cracker meal, Parmesan cheese and Italian seasoning. Brush chicken with butter, then coat with the cracker mixture.
  3. Heat  oil in a saucepan on medium-high heat. Saute chicken for 2 minutes on each side then transfer to oven and cook until internal temperature reaches 165 degrees F.
  4. Serving suggestion

    Serve with steamed asparagus and roasted new potatoes.
