  • 1-3/4 oz. coarsely crushed RITZ Crackers
  • 3/4 oz. shredded Cheddar cheese
  •   RITZ Coating
  • 1/4 oz. finely crushed RITZ Crackers
  • 1 egg
  • 1 Tbsp. milk
  • 1/2 oz. coarsely crushed RITZ Crackers

DIRECTIONS

    Omelet Bites:
  1. Saute  ham, peppers and onions in oil on medium heat 4 to 5 min. or until vegetables are soft. Add 3 Tbsp. liquid eggs; scramble to a soft texture. Transfer mixture to bowl. Refrigerate until chilled (40°F.)
  2. Add  remaining 3 Tbsp. liquid eggs, cracker crumbs and cheese to vegetable mixture. Fold gently until combined. Shape into 12 (1-oz.) balls.
  3. RITZ Coating:
  4. Coat  each omelet ball with fine cracker crumbs, dip in combined egg and milk, then in coarse cracker crumbs. Place on parchment paper-lined sheet pan. Cover with plastic wrap and refrigerate until ready to use.
  5. For each serving:
  6. Cook  3 Omelet Bites in 375°F deep fryer 1-1/2 min. or until insides are firmly set and outsides are golden brown.
