  • 15 lb. boneless skinless chicken breast halves
  • 12 oz. oil

  1. Preheat  oven to 400 degrees F.
  2. Mix  mustard, sugar, lemon juice and cumin in large bowl. Combine pecans and cracker meal in large shallow pan.
  3. Brush  chicken with mustard mixture, then add to cracker mixture, turning to evenly coat both sides of chicken with the cracker mixture.
  4. Heat  oil in large oven proof saute pan, on medium-high heat. Add chicken; cook 2 to 3 minutes on each side then transfer to the oven. Cook for 10-12 minutes until chicken reaches 165 degrees.
  5. Alternate use

    Use coating for fish.

    Serving suggestion

    Serve with a mixed green salad with goat cheese and pecans.
